Well, its that time of year again…

Love it or hate it when you are expected to carve out a pumpkin for your kids.

(or yourself?????)

Well, what to do with all that leftover mush?

Pumpkin soup perhaps, but in all honesty, it’s not my favourite.

So here’s another idea and it’s based on butternut squash which has a slightly sweeter flavour.

So you can use either or even a combination of both.
